I wanted to do something with the rest of that fresh cilantro before it wilted and went bad like so many of my fresh herbs tend to do before I can use them.
So I found a recipe for salad dressing that sounded promising. In fact, it turned out to be quite good.
It called for two cups of fresh cilantro but I only had about one cup, so I halved all the ingredients. The original recipe had a few variations, but I settled for the creamy one with avocado.
Here it is with the original portions.

Ingredients
- 2 cups fresh cilantro
- 1 garlic clove
- ¼ cup fresh lime juice
- 2 teaspoons maple syrup or honey
- ½ teaspoon ground coriander
- ½ teaspoon sea salt
- ½ cup extra-virgin olive oil
- 1 avocado
Instructions
In a food processor [I used my immersion blender], place the cilantro, garlic, lime juice, maple syrup, coriander, and salt and pulse to combine. With the blade running, pour in the olive oil and process until smooth. Add the avocado and finish processing.
Actually, I think I just through everything together and let the immersion blender do its thing.
It was scrumptious and lasted several days.
