I was looking for something to do with shrimp and decided to try an omelette. I found a recipe but made a few changes.
I started with a shallot, as I had some left over and I haven’t cooked with shallots very much, so why not?

I cut it into thin slices.

Three jumbo shrimp, peeled, deveined, and cut into thirds.

And about a teaspoon or so of soy sauce.

Heat some oil in a pan over medium heat and add the shallots.

When shallots are beginning to turn brown, add the shrimp and cook for about a minute on each side until the shrimp turn pink.

Add the soy sauce, swirl, and remove from the pan.
Wipe the pan with paper towels.
Break two or three large eggs (your choice) into a bowl, add a little salt and a little milk, beat until they are well mixed.
Add some more oil to the pan and make an omelette.

Add the shrimp mixture and fold onto a plate and enjoy!
