
I had some Granny Smith apples left over so I went in search of recipes that could use them.
I found one for Apple Upside Down Cake that sounded good.

It’s pretty much like Pineapple Upside Down Cake but without the pine (ha-ha).
I discovered that I no longer had any cake pans. I know I used to have some, but I must have gotten rid of them during one of my many moves into smaller habitats.
So I used the springform pan, which ended up working just fine, maybe even better than a regular cake pan.

It’s a bit of a pain to make (peeling all those apples; did I ever tell you I hate peeling apples? Maybe I’ll try it without peeling them next time), but in any case the cake is delicious.
