Goan Pork Vindaloo

This was the day I was going to make Goan Pork Vindaloo. All I needed was the pork and a good piece of ginger.

I got the boneless pork butt at Esposito’s and then went to Lucy’s for the ginger. Lucy wasn’t there, but I found the ginger that I needed, a piece that was at least two inches long.

I also got a bag of onions while I was there and headed home.

It was quarter after ten. Just time for my third cup of coffee before I got started on the Goan Pork Vindaloo, so I stuck the ginger and pork in the fridge.

The recipe turned out to be the kind that I like to make. Most of the work is done up front, then pop it into the oven and relax.

Trim the pork and cut it into one inch pieces. Then gather all the spices and garlic and water (there are about a dozen ingredients) into the blender (an immersion blender in my case) and make a paste. Slobber the paste onto the meat.

Get the chopped onions started sautéing in the Dutch oven and add the meat.

Put it into a low heat oven for 40 minutes, then add the vinegar (I substituted apple cider vinegar for the coconut vinegar; I mean who keeps coconut vinegar on hand?). That’s when I got the rice started and began to make the salad.

Really straight forward. I mean anyone could do it without screwing up.

I screwed up, of course.

After making a big deal out of getting just the right piece of ginger, I forgot to put the ginger into the spice paste!

I should not have put the ginger into the fridge. Should’ve left it on the counter in plain sight.

Oh, well, it still tasted great.

One of the best things I ever made. The pork melted in my mouth, it was that tender.

Next time I’ll try to remember to add the ginger.

One little note: I saw a comment on Amazon when I ordered the Kashmiri chili powder that the recipe I was using tuned out extremely HOT, even though it was claimed to be quite mild. As a result, I avoided adding the cayenne pepper, just to be on the safe side; it was optional anyway.

I normally ask for medium at those establishments that inquire as to your preference, and this turned out perfectly as far as I was concerned. It was hot, but it didn’t blow my toupee off. If I had been wearing a toupee, that is.
