Carrot Cake

Searching for a more healthful dessert, I came across a mention of carrot cake, and I remembered that a friend of mine used to make a terrific version of it. Who knows where that recipe is, so I found another one with cream cheese frosting. Hmm, doesn’t the cream cheese frosting remove any health benefits of the carrot cake itself? Oh, who cares?

The hardest part was peeling the carrots and then grating them. Even though using a food processor made quick work of the grating, there was a lot of cleanup work to do.

I had to both grease the cake pan and line the bottom with parchment paper.

I’ve had a few slightly overdone baking results lately, so I made the mistake of removing this one a little too early, so I won’t be sharing it with anyone.

I invited one of the neighborhood kids to lick the icing off the mixer beater.
