Roasted Strawberries

On a recent Graham Norton podcast Show chef Martha outlined an interesting idea to perk up those sad strawberries that you might find sitting in the back of your fridge.

Alas, I didn’t have any strawberries in my fridge, sad or otherwise, so I went out and bought some just to try it out.

Wash the strawberries, cut them into pieces, and arrange them on a baking sheet (I lined mine with aluminum foil to make cleanup easier). Sprinkle some sugar over them and then drizzle a bit of lime juice over them, and pop them into the oven at 350° F. (180° C.) for 10 to 15 minutes.

The heat releases a wonderful syrup. Martha used them as a topping for her main recipe, but I think I can find other uses for them.

I put them into a glass container and into the fridge.
